Thanks Brigid!!

A couple months back, Brigid sent me some great corn meal and I decided to learn how to bake.

My first couple of attempts were not all that spectacular, but one did confirm that the smoke detectors work as advertised.

Tonight though...perfection.

Behold--the corn muffin.


I made my first pan of these tonight...after not one, not two, but THREE trips to the grocery store to collect all of the stuff I needed. And they could not have come out better.

Thanks, Brigid! Now come visit New Orleans and I'll bake a pan just for you. Heck with pralines and muffaletta...my corn muffins are now at the top of the Big Easy culinary scene.

  2. Good deal! Now you need to learn how to make Mexican cornbread...there's all kinds of recipes and all of them are good. Perfect with chili, beans or at a cook out. I bet Brigid had better recipes then are online.

  3. I'm so glad those worked out. That is THE best stone ground corn meal so if you want more when the grist mill opens up again in April just let me know.

  7. Use a can of creamed corn to replace some of the liquid...

    Your next culinary assignment is the easy peasy homemade bread Amelia showed me at Thanksgiving.

      Cornbread muffins are indeed good for the soul. I say this as a converted Southerner (moved here 30 years ago. I'm 41. Can I claim official status now?)

      And, I'll add to the list. Dunno why her blog went 'restricted' after many years, but your writing is sincerely missed, Brigid. I hope you and yours are doing well.

    3. EVeryone - I had to take the blog private as one of my readers thought he could re-educate some university liberals by sharing my blog and the troll ensued. With a brand new book out, I had no choice before they started trolling Amazon as well. Book sales tanked but I had no choice. Blogger limits me to 100 readers and I have no openings. Hopefully in a few months it will be safe to come out again.

  12. you might want to give Jiffy Corn bread mix a try..can be found at Wal-mart. a little sweeter than other mixes but right tasty...
